A distant relative was part of Napoléon the 1st’s kitchen brigade. A small cook but he knew how to defend his speciality: the confection of delicious Périgord walnut biscuits.
One evening, a grumpy mustached man requested something good to eat. Afraid, he could only offer him the evening’s batch. The grumpy man was expecting bread and ham, but what he tasted that amazed him! The grumpy man softened. Convinced, he returned as much as possible to taste the biscuit-maker’s treats.
The grumpy man, upon retiring, gave his sabre to the cook as a present for services rendered.
The story however doesn’t end there, books hold other secrets; biscuit recipes conscientiously written down by my ancestor. I found a great source of inspiration in those books when creating Lou Cocal’s first sweet specialities.
It is in Sarlat, the heart of the Périgord Noir, renowned for its exceptional gastronomic food, that our artisanal biscuit factory awaits, under the commercial brand :
Lou Cocal (walnut in occitan) since 1996.
Our biscuits are made with local products from Périgord: walnuts, hazelnuts, chestnuts, cherries, melons and plums.
At the Lou Cocal biscuit factory we make homemade tuiles, shortbread, cakes and sweet treats.
We revive old traditional recipes that were once used by the local farms.

We have 25 different products nowadays. Our flexibility, reactivity and capacity to adapt are our strength.
